I'm excited to share this simple recipe for seco de res. This dish is close to my heart because I made it over and over during my sabbatical in 2016, when I was far from home and missed my family's cooking. Season the beef with salt, black pepper, and cumin.

Heat oil in a pot.

Brown the beef on both sides.
- 4
Set the beef aside.
- 5
Blend the cilantro leaves with the water.
- 6
In the same pot, sauté the onion and garlic.

Add the yellow chili pepper (optional).

Add the blended cilantro.

Add the carrots and green peas.
- 10
Add the potatoes, beef, and salt to taste.

Simmer for about 30 minutes over low heat. While this stew is meant to be fairly dry, you can add a little water at a time if you prefer more sauce.

In Peru, this is served with rice and boiled potatoes. Hope you enjoy it!
