Ingredients

45 minutes
Serves 3 - 4 servings
  1. 1.1 poundsbeef (I used beef tenderloin)
  2. 1 cupfinely chopped or blended onion
  3. 4 clovesgarlic, peeled and chopped
  4. 1 cupcilantro leaves, washed
  5. 1 cupwater (for blending the cilantro)
  6. 2-3potatoes, washed or peeled and cut into large chunks for quicker cooking
  7. 1 cupcarrots, diced small
  8. 1 cupgreen peas
  9. Yellow chili pepper (ají amarillo), seeds removed, to taste (I used half a pepper)
  10. Oil
  11. Salt
  12. Black pepper
  13. Cumin

Steps

45 minutes
  1. 1

    Season the beef with salt, black pepper, and cumin.

    Heat oil in a pot.

    Brown the beef on both sides.

    Set the beef aside.

    Blend the cilantro leaves with the water.

    In the same pot, sauté the onion and garlic.

    Add the yellow chili pepper (optional).

    Add the blended cilantro.

    Add the carrots and green peas.

    Add the potatoes, beef, and salt to taste.

    Simmer for about 30 minutes over low heat. While this stew is meant to be fairly dry, you can add a little water at a time if you prefer more sauce.

    In Peru, this is served with rice and boiled potatoes. Hope you enjoy it!
