Steps
- 1
If using dried chickpeas, soak them overnight or for at least a few hours.
Rinse all the meats and bones well. Place them in the pressure cooker and cover generously with water. When it starts to boil, skim off any foam or impurities with a slotted spoon for 5-10 minutes.
- 2
Add all the vegetables, minced garlic, and chickpeas. I suggest putting the chickpeas in a mesh bag (sold for this purpose) to make it easier to separate them from the other ingredients after cooking. Add a pinch of salt.
- 3
Cook for about 40-45 minutes in the pressure cooker. When possible, uncover and simmer for another 10-15 minutes without the lid over medium heat. This way, you can check the doneness of the chickpeas even if the rest is already cooked.
- 4
Strain the broth from the cocido and set it aside in another pot.
- 5
Taste the broth and adjust the salt if needed. Add the noodles (a handful per person) and cook for 7-10 minutes over medium heat.
- 6
Separate the meats, vegetables, and chickpeas. Cut them into pieces.
- 7
Serve immediately. First, ladle the soup into each bowl, then add the chickpeas, meat, and vegetables (cut into pieces).
- 8
Delicious! Feel free to have seconds :-)
