Bring a pot of water to a boil. Quickly blanch the pork loin, then chill it in the refrigerator.

Cut the eggplant and kabocha into bite-sized pieces. Pan-fry them in rice oil until cooked through.

Mix the bottled soba sauce with cold water to make the dipping sauce.

Bring water to a boil and cook the soba noodles. Rinse them under cold water and drain well in a colander.
