A very moist cake, perfect for any time of day. Pine nuts are optional. For this recipe, use the empty yogurt container to measure the other ingredients.

Add the yogurt, eggs, orange zest, peeled orange segments, and olive oil to a blender.

Blend well, then strain the mixture to remove any bits of orange peel.

Add the sugar and blend again.

Finally, add the flour and baking powder, and blend until the batter is smooth and free of lumps.

Grease and flour a cake pan, then pour in the batter. If you like, sprinkle about 1/3 cup (50 grams) of pine nuts and a little sugar on top to create a crunchy crust.

Bake in a preheated oven at 350°F (180°C) for about 40 minutes, or until the cake is fully set. Let cool completely before serving.
