Ingredients

Serves 2 servings
  1. 1chicken breast (about 8 oz / 225 g)
  2. 1 tablespoonsake (or dry white wine)
  3. 4 tablespoonsall-purpose flour
  4. 4 tablespoonswater
  5. 6-7 tablespoonspanko breadcrumbs
  6. 1/2onion
  7. 2eggs, beaten
  8. 3/4 cupwater (200 ml)
  9. 2 tablespoonssoy sauce
  10. 2 tablespoonssake (or dry white wine)
  11. 2 tablespoonsmirin (sweet rice wine)
  12. 1 tablespoonsugar
  13. 2servings cooked rice

Steps

  1. 1

    Cut the chicken breast into bite-sized pieces and pierce all over with a fork.

  2. 2

    Rub the chicken with the sake and let it sit for about 5 minutes.

  3. 3

    Mix the flour and water together, then coat the chicken pieces with this batter.

  4. 4

    Dredge the chicken in panko breadcrumbs, then pan-fry in a skillet with plenty of oil until golden brown.

  5. 5

    Once cooked, drain the excess oil and set the chicken aside.

  6. 6

    In a saucepan, combine the water, soy sauce, sake, mirin, sugar, and thinly sliced onion. Bring to a simmer.

  7. 7

    When the onion is soft, return the chicken katsu to the pan and gently pour the beaten eggs over the top.

  8. 8

    When the eggs are just softly set, serve the mixture over bowls of rice. Enjoy!
