I didn’t even need a knife for this—just used a bag of mixed vegetables! I love yakisoba, but yaki udon is just as delicious.

I didn’t even need a knife for this—just used a bag of mixed vegetables! I love yakisoba, but yaki udon is just as delicious.

Add the sesame oil to a skillet, then add the mixed vegetables. Season with salt and pepper and sauté until the vegetables are tender.

Heat the frozen udon noodles in the microwave until warmed through.

Add the warmed udon noodles to the skillet with the vegetables. Pour in the sake and dashi powder, then mix well.

Once everything is well sautéed, add the white dashi and soy sauce. Stir-fry a bit more.

Top with bonito flakes and serve.
