For the chicken stock: Rinse the chicken carcasses with boiling water, then simmer them.

Add the onion and chicken breast to the pot. Simmer over medium heat for 30 minutes. When the onion is soft, turn off the heat.

Let the soup cool. Remove the solids from the soup.

Set aside some of the chicken breast for topping as chashu. Roughly chop the rest.

Pick off any meat from the chicken carcasses.

Roughly chop the onion as well.

You should have about 4 1/4 cups (1000 ml) of soup. Return the chopped ingredients to the soup and blend until smooth.

Season the soup.

Add the garlic paste, ginger paste, Chinese chicken bouillon, salt, pepper, and chicken bouillon powder.

Prepare your favorite ramen noodles.

Pour plenty of soup over the noodles.

Top with the reserved chicken chashu and your choice of toppings, such as green onions and bamboo shoots. Enjoy!
