Ingredients

Serves 4 servings
  • 2chicken carcasses
  • 1onion
  • 1boneless, skinless chicken breast
  • Enough water to cover the ingredients (plenty)
  • 1 teaspoongarlic paste
  • 1 teaspoonginger paste
  • 1 teaspoonChinese chicken bouillon (such as 'Shanton' or similar)
  • 3 tablespoonschicken bouillon powder
  • Salt and pepper, to taste
  • Noodles for 4 servings
  • Chopped green onions, to taste
  • Bamboo shoots (menma), to taste

    For the chicken stock: Rinse the chicken carcasses with boiling water, then simmer them.

    Add the onion and chicken breast to the pot. Simmer over medium heat for 30 minutes. When the onion is soft, turn off the heat.

    Let the soup cool. Remove the solids from the soup.

    Set aside some of the chicken breast for topping as chashu. Roughly chop the rest.

    Pick off any meat from the chicken carcasses.

    Roughly chop the onion as well.

    You should have about 4 1/4 cups (1000 ml) of soup. Return the chopped ingredients to the soup and blend until smooth.

    Season the soup.

    Add the garlic paste, ginger paste, Chinese chicken bouillon, salt, pepper, and chicken bouillon powder.

    Prepare your favorite ramen noodles.

    Pour plenty of soup over the noodles.
