Make the curry sauce. In a heavy pot, heat the vegetable oil over low heat. Add the garlic and ginger and sauté until fragrant.

Add the onion and carrot. Sauté over medium heat for about 10 minutes until softened. Add the water, cover, and simmer for about 15 minutes.

Add the curry roux and Worcestershire sauce. Stir until the roux is dissolved and the sauce is done.

Slice the pork tenderloin into 1/2-inch (1.5 cm) thick pieces. Dip each piece into the prepared batter mixture, then coat with panko breadcrumbs.

Heat the oil to 350°F (180°C). Fry the pork for about 3 minutes until golden brown. Avoid frying too many pieces at once, as this will lower the oil temperature.

Serve the curry sauce over rice and top with the fried pork cutlets.
