Chop the shiso leaves (or substitute).

Cut the chicken thighs into bite-sized pieces.

Marinate the chicken in sake and cornstarch for 30 minutes.

Heat sesame oil in a skillet and sauté the chicken.

When both sides are golden brown, add the soy sauce, honey, and sake. Stir and simmer until the sauce thickens and coats the chicken.

Serve the chicken over bowls of rice and top with chopped shiso leaves.
