Prepare all the ingredients.

Except for the butter, weigh and add all ingredients to a zip-top bag. Mix until combined.

Add the diced butter and knead until a dough forms.

Refrigerate the dough to rise for 12-18 hours.

Remove the dough from the fridge, press it flat to release air, and let it rest for 30 minutes.

Divide the dough into 20 equal pieces.

Add some dried cranberries to each piece, shape into balls, and arrange evenly on a baking sheet. Score each roll with a sharp blade, cover with a damp paper towel, and let rise for 30 minutes.

Preheat the oven to 355°F (180°C).

Dust the risen rolls with a little bread flour using a fine mesh sieve.

Bake for about 20 minutes. Remove the baking sheet and let the rolls cool slightly, then transfer to a wire rack to cool completely.
