Ingredients

2 servings
  1. 1 cankidney beans or black beans, drained and rinsed
  2. 1 cancorn (or about 1.5 cups fresh/frozen corn)
  3. Halfa cucumber, finely diced
  4. 3/4 cup (100 g)crumbled feta
  5. 1 cup (50 g)chopped of cilantro or parsley
  6. 0.5 cupschopped celery or green onions (about one green onion)
  7. Dressing
  8. Juice of half a lime
  9. 2 tbspolive oil
  10. 1 tspdijon mustard
  11. 1 clovegarlic
  12. 1-2 tspground cumin
  13. 0.5 tsporegano
  14. 1 pinchsalt and pepper to taste

Steps

  1. 1

    Rinse the corn and the kidney beans.

  2. 2

    Dice up the cucumber and chop the cilantro or parsley amd green onion

  3. 3

    Get a big bowl and throw in everything you rinsed and chopped. Now crumble in the feta and give it a good mix.

  4. 4

    Get a small bowl and add all the ingredients for the dressing. Stir, then taste to make sure it's fine.

  5. 5

    Mix in the dressing to the salad.
