Bring a pot of water to a boil and cook the noodles according to the package instructions. For this recipe, I used Chinese wheat noodles.
Heat the sesame oil in a skillet until it just starts to smoke. - 2
Place the cooked noodles in a heatproof bowl. Sprinkle with chopped garlic, ground chili pepper, salt, and MSG. Pour the hot sesame oil directly over the chili pepper.

Top with chopped green onions and dried small shrimp (optional). Mix everything very well before eating. For best results, lift and toss the noodles as you mix.
