Split Milk Halwa

This is an amazing 4 ingredient recipe that's a lovely one for any occasion or a special day. Actually this splitting of Milk happens every other day in every household.
I have used fresh full fat Cow's Milk here. You can use any of your choice of Milk.
Though this is equal to and even looks like Cottage Cheese or Chenna, Split Milk is completely different because it happens naturally.

Whereas for Cottage Cheese, we induce curdling by different means.
And this Split Milk Halwa is almost instantaneously done. Very simple and just 3 more ingredients go into making this a beautiful Halwa in no time at all.
Though I have used a teaspoon of Ghee or Clarified Butter in this, it's totally optional. And as you can see, 2 litres of Milk will yield you only about 150 to 200 gm of Halwa.

And not only is it an amazing one, it's absolutely divine. Very delicious and can be enjoyed with Puris like me. My late father used to make this for us and we children use to enjoy it so much. And now my children enjoy it to the fullest. And whenever the Milk is spoilt, my kids jump in joy.
I dedicate this recipe to my loving father, my Abba.

Ingredients

25 minutes
3-4 servings
  • 2 litresfresh Cow's Milk
  • 6-7 tbspSugar
  • 1/4 tspCardamom powder
  • 3-4 tbspchopped Almonds

Steps

    Drain Milk and set aside until it is free of the liquid.

    Add this to the kadai or a pan. On a low to medium high heat, cook until the liquid content is considerably decreased. When it is almost dry, add Sugar, Cardamom powder and the Ghee. Mix well and roast until a lovely aroma emanates. Adjust Sugar accordingly. You can add less or more.

    And as the Halwa smells heavenly and Ghee is seen leaving on the sides of the kadai, it's absolutely done. Add any Nut of your choice to it. I have used some chopped Almonds. Serve warm immediately. Enjoy!
