Baked Eggs with Sofrito and Oven-Roasted Turkey Ham

Chop the onion, tomato, garlic, sweet pepper, and ham (I used salami).

Add a little olive oil to a pan. First, sauté the onion and garlic, then add the sweet pepper. Finally, add the tomato. Season with salt and pepper.

When the sofrito is ready, add the ham or salami and cook for 3 minutes.

In a small oven-safe dish, add the sofrito, then crack the two raw eggs on top.

Bake at 350°F (about 175°C) for 15 minutes, covered with aluminum foil so it cooks with steam. You can bake it longer or shorter depending on whether you like the yolk soft or fully cooked. I prefer it soft.

Remove from the oven, sprinkle with parsley, garnish with a sprig of cilantro, and serve with toasted bread. Enjoy!
