Ingredients

  • 1 cupquinoa
  • 2free range eggs
  • Halfhead broccoli, cut into medium pieces
  • 15-20asparagus spears, cut into thirds
  • 5 leaveskale, finely chopped
  • Halfa jar of salsa
  • 1 cup(or more) cheddar cheese
  • 1avocado, cubed
  • 1-2 tablespoonsolive oil
  • Salt
  • Pepper

    Cook the quinoa according to instructions

  2. 2

    Steam the asparagus and broccoli for about 3 minutes so tender but still so they have some bite

  3. 3

    On medium heat fry the chopped kale, cooked quinoa and steamed vegetables in olive oil for a few minutes

  4. 4

    While this is cooking, poach the two eggs

  5. 5

    Add salsa and cheese to the quinoa/vegetable mix and stir until heated and the cheese is melted (only a minute or so). Season well with salt and pepper.

  6. 6

    Divide the quinoa mix onto two plates, and place a poached egg on top of each.

  7. 7

    Add avocado cubes and some more salt and pepper
