Shahi Sheer Khurma

Shahi Sheer Khurma is a classic Mughlai dessert made with milk, dates, fine vermicelli, nuts & ghee. It is a traditional festive delight and is made during Eid ul-Fitr, Ramadan. Shahi Sheer Khurma is a classic Mughlai dessert made with milk, dates, fine vermicelli, nuts & ghee. It is a traditional festive delight and is made during Eid ul-Fitr, Ramadan. First upon combine milk and condensed milk in a pan and cook on low flame for 10 minutes, till it starts to thicken a little.

While the milk cooks, take a pan, heat the ghee and when it melts, saute the chopped cashews and chopped almonds for 2-3 minutes. Roast the nuts till brown. Then remove on a kitchen towel to get rid of excess ghee.

Put vermicelli in the pan in which the nuts were roasted. Roast the vermicelli till golden brown.

Put sugar in the pan. Note: Since condensed milk has been added in the milk, the quantity of sugar is less. If you are not using condensed milk, then increase the quantity of sugar and cook the milk for 20 mins.

Add thickened milk to the vermicelli and sugar mix and let it cook on low flame for 7-8 mins, till the the vermicelli cooks.

Put cardamom powder and saffron string and mix it.

Now our very delicious and yummy Shahi Sheer khurma is ready for serve. Garnish with roasted nuts, chopped pistachios, dried rose petals and serve.
