Authentic Bihari Litti Chokha

I heard a lot about aunthentic Litti Chokha and wanted to try it since long. So, tried by best and it came out wonderful! Much loved by all.
Made Litti Chokha by following 3 steps.
Firstly, made Chokha from Eggplant and Tomato by adding one boiled potato as well.
In the second step, kneaded dough for Litti and lastly, made Litti stuffing with roasted gram flour to substitute Sattu and that too was nice.
Serves best with coriander chutney and Potato Chokha with some sliced onions, lemon and green chilli.

Ingredients

2 to 3 people
  • To make Chokha
  • 1large Eggplant
  • 1 CupChopped Onions
  • 1Tomato
  • 1 tablespoonChopped Ginger
  • 8-10Garlic Cloves
  • 1boiled Potato (previously boiled)
  • 1 tablespoonChopped Green Chilli
  • 2 tablespoonsCoriander Leaves
  • 1 tablespoonWhite Salt
  • 1/2Lemon
  • 2 tablespoonsMustard Oil
  • 1/4 tablespoonsOil (For Coating Eggplant)
  • 1/2 tablespoonChopped Green Chilli
  • To Knead Litti Dough
  • 3 CupsWheat Flour (100 ml)
  • 2 tablespoonsGhee
  • 1 teaspoonWhite Salt
  • 1/4 teaspoonBaking Soda
  • 2-3 CupsWater or as required
  • For Litti Stuffing
  • 1 cupRoasted Gram Flour (previously roasted) (100 ml)
  • 1 tablespoonChopped Garlic
  • 1 teaspoonChopped Ginger
  • 2 tablespoonsChopped Coriander
  • 1/4 teaspoonCumin Seeds
  • 1/4 teaspoonCarom Seeds
  • 1/4 teaspoonSalt
  • 3-4 tablespoonsghee (for pouring on prepared littis)
  • For Coriander Chutney
  • 1/2 cuproughly chopped Coriander leaves
  • 1/2 cuproughly chopped Tomato
  • 1/4 cupchopped Onion
  • 1/2 teaspoonchopped Green Chilli
  • 1 tablespoonChopped Raw Mango
  • 1/4 teaspoonBlack Salt
  • 2-3Garlic cloves
  • For Garnishing
  • 1 tablespoonchopped Coriander leaves
  • 1sliced Onion
  • 1/2Lemon
  • 1green Chilli

    Take all ingredients together to make chokha. Wash Eggplant thoroughly with water and then slit to add peeled garlic cloves in between to get nice flavour in Bharta. Coat it with little oil to get easily peeled after roasting.

    Roast Eggplant and Tomato on direct flame by flipping from all the sides OR roast by putting net on the gas.

    When egg plant and tomato seems completely roasted, switch off the gas and transfer it to plate. Allow to come at room temperature and then peel both Eggplant and Tomato.

    Add one mashed boiled potato. Mix and mash it well with the help of masher. Add other ingredients like Chopped Onions, Ginger, Green Chillies and Coriander leaves. Note - Added one boiled potato in Eggplant and Tomato Bharta and one to two potato kept separate to make potato chokha. It is optional to make potato chokha.

    Also, add mustard oil and give it a good mix. Then add salt as per taste.

    Lastly, sequeeze half of lemon and mix well all the ingredients. Chokha is ready! Keep aside.

    Take all ingredients together to knead dough for Litti. In a large mixing bowl, put wheat flour and add salt in it.

    Further, add ghee. Crumble and mix well making sure the ghee is combined well. Lastly, add baking soda.

    Mix well making sure that it holds a shape. Begin to knead dough by adding water as required. Cover and allow to rest for 20 to 30 minutes.

    Take all ingredients together for Litti stuffing. In a big bowl, put roasted gram flour along with other ingredients like Chopped Onions, Ginger, Garlic, Green Chilli, Coriander leaves, Cumin, Carom seeds and Salt. Note - Sattu is substituted with roasted gram flour

    Combine well adding two tablespoons Mustard Oil or few Lemon drops. The stuffing mixture should be little moist. Neither too dry nor too wet. The perfect consistency if it holds shape. Litti stuffing is ready.

    Knead slightly the rested dough once again and begin to fill the stuffing. Take small ball size dough. Press the edges to form like a cup.

    Place prepared stuffing in it. Start pleating the dough making sure the stuffing is secured well. Prepare all the littis following same way.

    Heat pressure cooker for few minutes removing lid and whistle. Place prepared littis in it. Tip - You may prepare littis in appe pan.

    Cover and cook on medium high flame by fliping in between. Cook rest of the litti following same way.Transfer it to plate. Smash to check if it is thoroughly cooked. Keep aside and prepare ingredients for Coriander Chutney.

    Take all ingredients together to make Chutney. In a blender jar, put chopped onion, raw mango, tomato, garlic cloves and green Chilli. Blend it. Now add chopped coriander leaves and again blend to form a Chutney. Tip - You may add lemon juice to substitute raw mango.

    Transfer it to bowl and lastly add little black salt. Mix well and Chutney is ready! Enjoy with Litti and Chokha.

    Keep together all the prepared ingredients. Litti, Eggplant and Tomato Chokha, Potato Chokha and Coriander Chutney. Garnish chokha with chopped coriander leaves. Note - Made Potato Chokha simply by adding Chopped Onions, Salt, Coriander Leaves and mustard oil.

    While serving, pour some ghee on the litti, smaash from the centre.

    Put prepared Chokha onto Litti. Top it with Green Coriander Chutney. Place potato Chokha, some sliced onions and green Chiili. Sequeze few Lemon drops on it and it is ready to enjoy!
