Okra ( lady's finger / bhindi )is simple and tasty recipe. It has many health benefits . Also it is low in calories and so is a good addition to your daily diet.

Okra ( lady's finger / bhindi )is simple and tasty recipe. It has many health benefits . Also it is low in calories and so is a good addition to your daily diet.
Steps

First cut the okra tops and tails and slice them into 1 inch pieces.

Heat oil in a heavy bottomed pan on a medium heat add asafoetida.

Now add okra and salt to taste.

Cover the pan with its lid and cook in its steam until the bhindi is tender. Do make sure to keep stirring it occasionally. This process takes approx 10 minutes.

Once tender, add in the tomatoes. Cook the okra along with the tomatoes with the lid slightly ajar.

Once you notice the tomatoes have also turned soft; add in the spices mentioned above.

Stir well until all the ingredients are well combined and saute for another 3 to 4 minutes with its lid open.

At last add coriander leaves mix well and turn off the heat.

Serve hot with roti.
