Ingredients

2-3 people
  1. 5rotla (when small size, only 2 are enough if traditional size)
  2. 1/2 cupchopped green garlic (keep the bulbs and springs separate)
  3. 1/4 cupspring onions if available (keep the bulbs and the springs separate)
  4. 1small tomato finely chopped
  5. 1 tbspginger and green chillies paste
  6. 1 tspgarlic paste or chopped garlic
  7. 2 tbspoil
  8. 1/2 tspajwain
  9. 10curry leaves
  10. 1/8 tspasafoetida powder
  11. 1/4 tspturmeric powder
  12. 1/2 tspchilli powder
  13. 1 tspdhanajeera powder
  14. 1/2 tspsalt

    Break rotla in to small pieces. Put them in a blender and run on pulse until you get tiny pieces of them. Refrigerated rotlas are easy to grind in a blender. Prepare rest of the ingredients as seen in the pic.

    Heat up oil, crackle ajwain and then add curry leaves. Add garlic paste and fry a bit on the lowest heat until it starts to get golden brown. Add the green chillies and ginger paste, and the bulbs of garlic and onions. Fry a bit.

    Next add the tomatoes and the spices. Fry till oil oozes and the tomatoes are soft. Do not but out the moisture from tomatoes. Add the springs of garlic and onions. Add rotlo. Combine everything well. The ghee from rotlo will also start to separate and the mixture will look shiny.

    It's ready! Serve hot
