Ingredients

  1. Pakoray Ingredients:
  2. 1/4 cupgram flour (besan)
  3. 1small potato, thinly sliced
  4. 1small onion, thinly sliced
  5. 1green chili, finely chopped (optional)
  6. 1/4 teaspooncumin seeds
  7. 1/4 teaspooncoriander seeds, crushed
  8. 1/4 teaspoonred chili powder
  9. Salt to taste
  10. as neededWater,
  11. Oil for deep frying
  12. Chaat Ingredients:
  13. 1/4 cupboiled chickpeas
  14. 1small potato, boiled and diced
  15. 1small onion, finely chopped
  16. 1small tomato, finely chopped
  17. 1green chili, finely chopped (optional)
  18. 2 tablespoonstamarind chutney
  19. 2 tablespoonsmint-coriander chutney
  20. 2 tablespoonsyogurt
  21. Chaat masala to taste
  22. Sev (crunchy chickpea noodles) for garnish
  23. Fresh coriander leaves for garnish

    1. Pakoray Preparation:

    In a mixing bowl, combine gram flour, sliced potatoes, sliced onions, green chili (if using), cumin seeds, crushed coriander seeds, red chili powder, and salt.

    Gradually add water to the mixture to form a thick batter. The consistency should be such that it coats the back of a spoon.

    Heat oil in a deep pan for frying.

    Once the oil is hot, carefully drop Spoonfuls of the batter into the hot oil.

    Fry the pakoras until they turn golden brown and crisp. Remove from oil and drain excess oil on paper towels.

    2. Chaat Assembly:

    In a serving plate, arrange the fried pakoras.

    Scatter boiled chickpeas, diced potatoes, chopped onions, and tomatoes over the pakoras.

    Drizzle tamarind chutney and mint-coriander chutney over the pakoras and other toppings.

    Beat the yogurt until smooth and pour it over the chaat.

    Sprinkle chaat masala on top according to your taste preference.

    Garnish with sev and fresh coriander leaves.
