Ingredients

  • For the turkey:
  • 1turkey leg or turkey breast (about 8-10 ounces)
  • 1/2 tablespoonground coriander
  • 1/2 tablespoonground cumin
  • 1/2 tablespoonpaprika
  • 1/2 teaspoonground ginger
  • 1/2 teaspoongarlic powder
  • 1/2 teaspoononion powder
  • 1/2 teaspoondried thyme
  • 1/2 teaspoondried oregano
  • 1/2 teaspoonchili powder
  • Salt and black pepper to taste
  • 1 tablespoonolive oil
  • For the Nigerian-inspired sauce:
  • 1/2onion, finely chopped
  • 1 clovegarlic, minced
  • 1/2red bell pepper, diced
  • 1/2tomato, diced
  • 1/2scotch bonnet pepper (adjust according to spice preference), minced
  • 1/4 teaspoonground crayfish (optional)
  • 1/4 teaspoonground nutmeg
  • 1/4 teaspoonground allspice
  • 1/4 teaspoonground cinnamon
  • 1/2 cupchicken broth
  • 1/2 tablespoontomato paste
  • 1/2 tablespoonpalm oil (or substitute with vegetable oil)
  • Salt to taste

Steps

    Prepare the Turkey:

    Preheat your oven to 375°F (190°C).

    Rinse the turkey leg or breast under cold water and pat dry with paper towels.

    In a small bowl, mix together the ground coriander, cumin, paprika, ginger, garlic powder, onion powder, thyme, oregano, chili powder, salt, and black pepper.

    Rub the turkey with the olive oil, then rub the spice mixture all over the turkey, making sure to coat it evenly.

    Place the turkey on a baking sheet lined with parchment paper.

    Roast the Turkey:

    Roast the turkey in the preheated oven for about 40-50 minutes, or until the internal temperature reaches 165°F (75°C). If using a meat thermometer, insert it into the thickest part of the turkey.

    Once cooked, remove the turkey from the oven and let it rest for a few minutes.

    Prepare the Nigerian-inspired Sauce:

    While the turkey is roasting, heat the palm oil in a small skillet over medium heat.

    Add the chopped onion and minced garlic to the skillet and sauté until softened and fragrant.

    Stir in the diced bell pepper, tomato, and scotch bonnet pepper, and cook until the vegetables are tender.

    Add the ground crayfish (if using), nutmeg, allspice, and cinnamon to the skillet, and cook for another minute.

    Stir in the chicken broth and tomato paste, and simmer the sauce for about 5-10 minutes, or until it has thickened slightly.

    Season the sauce with salt to taste.
