Boil a pot of water, add 1 teaspoon of salt, and blanch the water spinach.

Mix all the sauce ingredients until well combined.

Remove the water spinach, drain slightly, and let cool.

Lay plastic wrap on the table (a sushi bamboo mat works even better), then place the water spinach on top.

Roll it up and squeeze out the excess water.

Cut the water spinach into sections (about 1-2 inches each).
