Ingredients

45 minutes
2 serves
  • For Ringan Oro
  • 1big Ringan/Brinjal
  • 1onion
  • 1tomato
  • 1/2Capsicum
  • 2 tbspcrushed chilli garlic ginger
  • 2 tbspFresh coriander
  • 3 clovesgarlic (cut in halves)
  • 3green chillies
  • 1 tspsalt
  • 1 tspchilli powder
  • 1/2 tspturmeric powder
  • 1 tbspcoriander powder
  • 1 tbsplemon juice
  • 1 tbspoil
  • 1 tspmustard, Cumin seeds
  • 1/4 tspAsafoetida
  • For the Chapati
  • 1 bowlSorghum Flour
  • 1 bowlPearl Millet Flour
  • 1 cupwater
  • 1/2 tspsalt
  • 1/2 tspoil
  • Required ghee to apply on Chapati
  • 1 GlassMasala Buttermilk
  • 1small bowl of tomato onion salad
  • 2 tbspJaggery
  • 4-5 pcsfried green chillies

Steps

45 minutes
  1. 1

    Wash and wipe the Ringan.
    Make small slits on Ringan and insert garlic,chilli pieces around the ringan.
    And roast on the gas on a slow flame till Ringan cooks and becomes soft.
    Remove from the gas, let it cool then remove the skin and mash it.

    Add oil in a pan.
    Add mustard cumin seeds and Asafoetida to crackle.
    Now add crushed chilli garlic ginger along with onion and salt.
    Sauté well, then add tomato and capsicum,when tomatoes become soft,add chilli coriander and turmeric powder and fresh coriander.
    Mix well till masala cooks.
    Now add mashed Ringan and mix with masala let it cook for 2-3 minutes,
    Lastly,add lemon juice and mix thoroughly.
    Switch off the gas.
    Ringan Oro is ready
    Transafar in the bowl and garnish with fresh coriander.

    Now Chapati time..
    Sieve the flour.
    Boil the water in a pan, add salt and oil.
    Add both the flour and mix well with the rolling pin.
    Switch off the gas and cover the pan for 5 minutes,
    After that transfer the flour in the dish and let it cool down.
    After that knead the dough with little water and make it smooth.

    Divide into 5 equal portion.
    Now roll the Chapati with the help of dry flour.
    Then,roast it well on both sides,Apply ghee.
    Make the rest..

    Now Serving Time..
    Put the ringan oro bowl in the dish along with chapati,salad, Jaggery,fried chillies and masala buttermilk..
    Enjoy the yummy, nutritious meal.
