First, prepare the batter by sifting the flour into a bowl and gradually adding the water to achieve a loose texture (the more liquid the batter, the thinner and crispier the fritters will be). Replace the last portion of water with cold beer to make them even fluffier and crispier.

Next, add the finely chopped garlic, parsley, and salt to taste. Add a pinch of food coloring now to give the fritters their characteristic color.

Then, add the shrimp and mix everything well. Let the mixture rest in the refrigerator for about 30 minutes. To cook, heat plenty of olive oil in a skillet. When the oil is very hot, drop spoonfuls of the batter into the pan and flatten them slightly. Remove them when they are crispy.
