Quinoa Halwa

Rinse and drain quinoa 2-3 times with water.

Heat ½ tbsp of ghee in a heavy bottomed pan and fry the quinoa for 1-2 minutes.
First add half a cup of milk and half a cup of water and bring it to a boil on high heat. - 3
Then lower the heat, cover and simmer for 10-15 minutes. After 15 minutes remove the lid and check. The quinoa is almost cooked. Also both milk and water are absorbed.

Add remaining half cup of milk.

Add cardamom powder, milk masala powder, sugar.

Also add remaining half cup of water (or 5-8 tbsp water as needed). Cover once again and simmer for 5-10 minutes until the mixture is thick and creamy.

Remove lid and cook for a few minutes while stirring. Quinoa is cooked and milk and water are completely absorbed.

Garnish with few chopped almonds and pistachios.

Serve warm.
