First of all wash, clean and chop the coriander. Add the green masala and crush it in a mixer.

Sift both the flour and semolina and add all the dry spices, sesame seeds, oil.

Now add coriander and crushed green masala and lemon juice and mix everything. Then add water as required (1/2 cup) (like muthiya) and make a medium dough.

Grease the plate with oil and spread sesame seeds on the dough of coriander mixture and press it with a pan. Put the prepared plate in the steamer and steam it for 15 minutes, then check and take it off.

Now when it cools down, cut it into square pieces. Deep Fry it in hot oil on medium flame until it comes golden and crisp.

This is how Maharashtra's famous kothambir Vadi is prepared. It can be stored for 2-3 days. You can enjoy it as tea time snack, picnic starter,traveling snack or rainy season snack and enjoy.
