Closest thing to an Omelette Sandwich as I will make

I don't like Omelettes. This will be as close to one I will eat. I have found no restaurants that will put what I would even begin to like in an Omelette. I have seen everything from rice to pulled pork, from veggies to macaroni and cheese. I will eat eggs with bacon, sausage, cheese, ham, spices, herbs, hot sauce, but not all together. I guess I am just picky. However I have cooked eggs many ways for others, and will continue to do so.

Toast the bread. Dice the tomatoes, melt the butter, Sauté the tomatoes in the butter. Season with salt and pepper. Add mayonnaise, ketchup, and mustard to the toasted bread. Add the eggs to the tomatoes and scramble them till done.

Add the cheese and allow to melt. Divide the eggs between two of the slices of the toasted bread. Add pickles on top of one of the stacked eggs. Stack the sandwich, cut it in half, and serve. I hope you enjoy!!!
