Sweet potato muffins in airfryer

I have had an air fryer for a couple of years now. Not because I used to fry lots of things before. Rather because I have always used the oven lots in my home cooking, and  after reading about the air fryer, I thought it could be useful in my transition to scaling down from cooking big meals for more family members, down to cooking for just for one or two. And in that way it is super useful -  I would describe it more as a small, super efficient fan oven than a fryer with air. And.. this was my first attempt at making something sweet!

Ingredients

30 mins
15 muffins
  1. 2sweet potatoes
  2. 120 mlolive oil
  3. 2eggs
  4. 150 grsoft brown sugar
  5. 20 mlmaple syrup
  6. 20 mlalmond milk
  7. 220flour
  8. 1.5 tspbaking powder
  9. 1.5 tspginger
  10. 1 pinchsalt
  11. A fewcubes of ginger

Cooking Instructions

    Wash and scrub the sweet potatoes. Make a cut around the edge, roll them up in kitchen roll and run them under the tap. Put them in the microwave and cook for 10 minutes.

    While they are cooking, prepare the rest of the ingredients. Beat the eggs, maple syrup, sugar and oil in one bowl. And put all the dry ingredients in another. If you are using dried ginger cubes, cut them into small pieces before adding to the dry ingredients.

    When the microwave beeps, take the sweet potatoes out, scoop the flesh out and add it to the liquid bowl. Also add the almond milk at this point.

    Mix all the ingredients with an electric hand mixer. Then add all the dry ingredients, and mix more with a wooden spoon. Fill the muffin cases.

    The muffins will cook in 12 minutes in the air fryer at 165º. I used half the mixture to make muffins, and the other half to make a cake.

    Super easy and, even though I was a bit sceptical about baking sweet things in the air fryer, turns out they actually bake just fine!!

Born in the UK. Came to Spain on finishing Uni many many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day. I don't usually have much time my recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal because I prefer buying fresh local produce as much as possible. However sometimes, when I do have more time, I like to spend a few hours making more time-consuming recipes and filling my kitchen with delicious smells and great music.

I was persuaded to buy an airfryer by my family but rather than it being a fast food cooker, I totally agree with you as it’s great as an oven especially when it’s hot like now as we are having a mini heatwave and I don’t want to heat my wooden house even more.
