Pick the tender shoots and leaves from the sweet potato plant and wash them thoroughly. Blanch briefly in boiling water to reduce the strong flavor and help keep the leaves green and tender when sautéed.
Heat oil in a pan and sauté the garlic until lightly golden, then add the sweet potato leaves and stir well. - 2
Season to taste, stir the leaves again briefly, then turn off the heat.
