Smash bananas in a bowl, add all other ingredients, and mix until just combined. Leave to sit and swell for 10 minutes. During this time, prep your muffin tins and preheat the oven to 375. Fill the muffin tins to the top, about 6-8 T each, which will create a nice dome. Add streusel or other toppings (cream cheese) desired. Bake 15-20 minutes or until a toothpick comes out clean. For cinnamon sugar muffins, brush the tops with butter, then dip into a cinnamon sugar mixture.

I browned my butter first for a nuttier flavor, but you don't have to.
If you sub honey for brown sugar you may have to up the flour content just a little.
