Wash, fillet, and salt the sardines. In a large pan, dice the ripe tomatoes and place them at the bottom. In the middle, add the sliced onion and arrange the sardines closed around the pan.

Next, add the roughly chopped garlic, sliced horn pepper, lemon juice, olive oil, and sliced hot pepper (adjust the heat to your taste). Add the dried and fresh oregano (reserve some for garnish).

Cover with a lid and cook for 8-10 minutes. Once ready, serve on a round platter and garnish with fresh oregano, lemon, and olives. Enjoy with your friends with some tsipouro or ouzo.
