Ingredients

20 minutes
1 bundt pan
  1. 2 cupsfine semolina (or 1 cup coarse and 1 cup fine semolina) (about 320 grams)
  2. 1/2 cupolive oil (120 ml)
  3. 1/2 cupraisins (80 grams)
  4. 1/2 cupblanched almonds (70 grams)
  5. For the syrup:
  6. 4 cupswater (960 ml)
  7. 2 cupssugar (400 grams)
  8. 1cinnamon stick

  1. 1

    In a medium saucepan, combine the sugar, water, and cinnamon stick. Bring to a boil and simmer for 5 minutes.

  2. 2

    In a large pot, add the semolina and olive oil. Toast over medium heat, stirring, until the semolina changes color and becomes golden.

  3. 3

    Remove from the heat. Gradually add the syrup to the semolina mixture, one ladle at a time, stirring constantly until all the syrup is absorbed. Return to the heat and cook, stirring, until the mixture thickens into a creamy texture. Stir in the raisins and almonds.

  4. 4

    Transfer the halva to a bundt pan or individual bowls. Press down firmly with a spoon. Let it cool completely, then unmold onto a plate.
