A Punjabi / Gujarati Sweet that everyone has a reason to like -- some for its taste, some for the benefits of doodhi & milk & some for the warm feeling that it instills on a rainy day .
I have used skimmed milk here as it is better to go for lower fat milk as too much saturated fats on the body increases the risk of high cholesterol .
Skimmed millk is good for standing tall & healthy as the Calcium & fortified Vitamin D in it helps in keeping healthy bones , healthy heart ❤️, helps in regulating blood sugar .

Fill a pan with water. Heat the water. When the water becomes hot, add grated doodhi. Cook the doodhi in boiling water till soft. Drain. Keep aside.

Take 1 tbsp ghee in a pan. When ghee becomes a little warm, add charoli & saute for a few seconds. Remove in a plate. Keep aside.

In the same pan add rest of the ghee. Add grated doodhi & saute well for 5 minutes.

Add milk & sugar & cook approx. for 15 minutes or till the milk evaporates.

Add mawa (khoya) & fried nuts, & cook for 3 - 4 minutes on a medium flame 🔥 while stirring occasionally. Add almond & cardamom powders. Mix

Remove in a bowl & serve doodhi halwa warm or chilled.

Serving options : You can either serve it in a bowl & help yourselves from it like the Punjabis do.
OR
Cut into pieces & serve with a full meal as the Gujaratis do.
