Overnight Chia Seeds Pudding

Anyone wants pudding for breakfast? This chia seeds pudding is not only easy but you can also add any of your preferred toppings. We usually add freshly cut fruit (a combination of sweet and slightly sourish) then add some crunch (toasted nuts, coconut flakes) and sweeten it with honey or maple syrup.

Chia seeds pudding is not for everyone as some may not like the taste and the texture. This recipe is for 1-2 persons.

Combine the milk, chia seeds and hiney in a glass jar. Stir to mix everything and refrigerate for 2 hours or 3. Next, stir the mixture for a second time to break any possible and visible lumps. This step is a must or you will have a clump of chia seeds at the bottom of the jar, resulting a thinner and chucky pudding.

The next day/morning, the pudding should set well. Stir and divide it into 2 individual serving cups or glasses. Top them with chopped fruit. We usually use both sweet and slightly tangy/sourish fruit. Here we used sweet mango and berries. Add some crunch by adding toasted coconut flakes, granola or nuts and lastly drizzle with some extra honey or maple syrup. Serve immediately.

📝 NOTES
1. If the pudding does not set, add a tsp of chia seeds, stir and refrigerate for few hours until it thicken.
2. If the pudding is too thick, add a splash of milk, stir and adjust to your preferred consistency.
3. You can also add any of your protein shakes to your pudding in step 2.
