Vegan Lemon Curd/Pie Filling

Heat all but the butter on the stove top, medium heat, stirring until thick or reaches 160 degrees F. Take off stove, thoroughly mix in the butter. If putting in pie immediately pour into a prepared pie crust, then saran wrap making sure it's touching the curd. If storing for later leave in pot or remove to a bowl, saran wrap until touching curd, refrigerate overnight and move to your storage container after refrigerating.
