Rinse the ribs briefly, then boil them in water for 5 minutes to remove impurities from the bones.

After 5 minutes, drain the water and rinse with cold water. Place the ribs in a clean plastic bag with 1 tablespoon minced shallot, 2 tablespoons soy sauce, 1/4 teaspoon salt, and a little pepper. Shake well for 5-10 minutes. Then add 3 tablespoons cornstarch and shake until the ribs are coated.

Cut the white onion, red and green bell peppers, and pineapple into 3/4-inch squares.

Heat oil and wait until it's hot, then fry the ribs. Lower the heat and fry both sides evenly.

After frying, place the ribs on paper towels to absorb excess oil.

Make the sweet and sour sauce: Mix 3 tablespoons ketchup, 3 tablespoons vinegar, 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 3 tablespoons sugar, and 1 tablespoon cornstarch. Stir until combined.

Add a little oil to a pan, then add 1 tablespoon minced garlic and 1 tablespoon minced ginger.

Next, add the red and green bell peppers and white onion, stir-frying for 1 minute.

Then add the pineapple and stir-fry for 2 minutes.

Next, add the sweet and sour sauce mixture and cook until it thickens.

Finally, add the fried ribs and stir-fry until the ribs are coated with the sauce. Turn off the heat and enjoy with rice!
