Cut the pumpkin into small pieces. Separate the salted egg whites from the yolks, and chop the egg whites into small pieces for later use.

Add a little more oil than usual for stir-frying into the pan. Fry the pumpkin pieces using a shallow frying method until they are golden on the surface, then remove and set aside.

Add a suitable amount of oil to the pan and heat. Stir the salted egg yolks until they bubble, then add the pumpkin and pour in the egg whites. Mix well and remove from heat.

Serve on a plate and enjoy!
