Pineapple Zuccotto with Ladyfingers and Limoncello Cream

To help the whipped cream hold its shape, chill the mixing bowl and beaters in the freezer for a few hours before starting.

Line the mold with plastic wrap. Arrange well-drained pineapple slices on the bottom and sides. Place a candied cherry in the center of each pineapple ring. Cover with another layer of plastic wrap and refrigerate temporarily.

Whip the heavy cream until stiff peaks form, then refrigerate.

Soften the gelatin in cold water.

In a small saucepan, combine the sugar, 1 tablespoon water, 1 tablespoon limoncello, and the lemon juice.

Heat gently, stirring, until the sugar dissolves, but do not let it boil. Remove from heat, add the squeezed gelatin, and stir to dissolve.

Take the whipped cream from the fridge and gently fold in the sugar-limoncello syrup, mixing from the bottom up to keep the cream fluffy.

Take the mold with the pineapple slices and spread a layer of cream over them. Add a layer of ladyfingers dipped in the pineapple syrup mixed with a couple of tablespoons of limoncello. Adjust the amount of limoncello to taste.

Continue layering cream and soaked ladyfingers until all ingredients are used.

Finish with a final layer of cream, cover with plastic wrap, and refrigerate for 5–6 hours to set. For a quicker set, place in the freezer for a shorter time. Once set, remove the top layer of plastic wrap, invert onto a serving plate, remove the rest of the wrap, and decorate as desired.
