It's avocado season and the weather is hot, so I made some ice cream to cool off.

Bring 1/3 cup sweetened condensed milk (about 100 ml) and 1/3 cup water (about 100 ml) to a boil. Pour the hot mixture over the avocado and blend until smooth.

Combine the coconut milk and sugar in a saucepan and bring to a boil. Dissolve the tapioca starch in a little water, then add it to the coconut milk. Cook until it boils again, then remove from heat.

Layer the blended avocado and coconut milk mixture in a mold, alternating layers until all the avocado and coconut milk are used. Freeze in the freezer. When ready to eat, remove from the freezer and enjoy.
