Boil the potatoes until they are soft enough to mash.

Drain the tuna and squeeze out any excess water.

Once the potatoes are fully cooked, peel and mash them.

Finely chop the parsley.

Add all the ingredients (salt, pepper, eggs, and tuna) to the mashed potatoes and mix until well combined.

Heat a little olive oil in a skillet. Shape the mixture into patties and place them in the skillet. Drizzle a little olive oil on top of each patty, flip, and cook for about 10 minutes until golden brown. Remove and serve. These go great with pico de gallo and refried beans.
