Italian Chickpea Soup
Gently spicy and warming soup.
Cooking Instructions

Soak chickpeas overnight. Then cook them (I’m using instapot).

Wash tomatoes. Cut the hard middle part. Bake them for 30 min at 370F.
- 3
Chop celery and carrots 🥕. Cook covered in the pot with olive oil and a bit of water for 3-5 minutes.

Peel the tomatoes. Add tomatoes and chickpeas with boiling water to the pot. Add the spices. Cook covered for 30 minutes.

Blend the soup. Add salt and pepper to your taste.
