Ingredients

2 people, dinner salad
  1. 1 poundcanned sardines in oil or tomato sauce, spines removed
  2. 12butter lettuce leaves
  3. 2 cupscut green beans
  4. 1 cupcubded potato, skin on
  5. 2fresh farm eggs, 4 minute softboiled, halved with peels on, then scooped
  6. 12ripe sweet grape tomatoes, halved
  7. 2marinaded artichoke hearts, cubed
  8. 2Green garlic chives, chopped
  9. 1lemon, wedged in quarters
  10. 1 Tbsdijon mustard
  11. 1 Tbsred wine vinegar
  12. 1 TbsJuice from marinaded artichockes
  13. leavesOptional fresh basil

Cooking Instructions

15 minutes

    Layer a dozen washed butter lettuce leaves on bottom of salad bowl.

    Mix boiled potatoes and green beans with dijon mustard, red vinegar, artichoke marinade and fresh lemon juice. Taste, adjust flavors, put on top of lettuce leaves.

    Halved grape tomatoes, chopped garlic chives, put over the green bean mixture.

  4. 4

    Cut soft boiled eggs in half in the shells, scoop out of the shells. Pinch of sweet red paprika powder on top. Decorate salad with boiled eggs and with cut up artichoke wedges. Open sardines, remove spine, add sardines and lemon wedges, serve. Enjoy.
