Ingredients

  1. 2 tbsolive oil
  2. 1-2chicken breasts, diced (I only had one)
  3. 1/2 tspsalt
  4. 1/2 tspgarlic powder
  5. 1/2 tspdried basil
  6. 1/2 tsporegano
  7. 1/2 tspblack pepper
  8. Optional: 1/2 tsp crushed red pepper
  9. 2bell peppers, sliced
  10. 1 1/2 tspminced garlic
  11. 1/4 cupchicken broth

Cooking Instructions

    Heat 1 tablespoon of oil over medium high heat in a large skillet. Add your chicken to the skillet. Season with salt, garlic powder, basil, oregano, and pepper. Cook, stirring frequently, 3 - 4 minutes or until chicken pieces are cooked through with some browning. Set chicken aside when done.

    Add peppers to the skillet with the remaining oil. Cook for 3 to 4 minutes or until they're tender. Add minced garlic and sauté for about one minute until golden. You will need to de glaze plan with chicken broth, add half at a time.

    Reduce heat to medium-low. Add chicken back to the skillet and stir everything together. Cover so everything heats through for 1 to 2 minutes. Taste. Add extra salt or pepper if desired.
