Soak tamarind in water for half an hour.

Wash and wipe ginger.Grind coarsely.Heat a pan add 1 tablespoon oil and saute ginger for 4-5 minutes.Keep aside.

In a pan add coconut oil add Fenugreek seeds, curry leaves, red and green chilli pieces and chopped onion.Saute for two minutes.Add asafoetida.

Add tamarind water, jaggery, and salt.Cook for five minutes till mixture thickens.

Now inji puli is ready to serve for onam sadhya.
