To begin, prepare the sauce mixture. Mix together light soy sauce, brown sugar, vinegar, Sriracha sauce, freshly ground pepper, and sesame oil in a bowl. Keep aside.

Heat 2 tbsp of oil in the pan. Add the chopped garlic and saute.

Add the chopped onions and saute for a minute.

Add the diced carrots and cook until they soften a bit.

Next, add the bell peppers, spring onion whites, and peas. Stir fry for a few minutes.

Now add in the rice and mix well.

Pour in the sauce mixture and mix well. Cook for a few more minutes.

Nasi Goreng or Indonesian Fried Rice is ready to serve. Garnish with spring onion greens. Serve with one fried egg per serving, sliced cucumbers, and tomato wedges.
