Ingredients

10 minutes
4 servings
  • 1/2 cupwashed and chopped spring onions shoots
    Sooji and Spring Onion Chilla
  • 2peeled and finely chopped small spring onions
  • 1small tomato chopped finely
  • 1/2 cup moong sprouts
  • 2 tablespoonsfresh grated coconut
  • 1 teaspoonmint leaves chutney
    Mint Peanut Coriander Chutney
  • 1green chilli chopped fine
  • 1 pinchgrated ginger
  • 1 teaspoonsalt or to taste
  • 1 teaspoonsugar
  • 2 teaspoonghee
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspooncumin seeds
  • 1/8 teaspoonasafoetida/ hing powder
  • 4curry leaves finely chopped
  • 1 teaspoonchilli powder
  • 1/4 teaspoonturmeric powder
  • 1 tablespoonlemon juice
  • 1/2 tablespoonschopped coriander leaves

Steps

10 minutes
  1. 1

    First take a large bowl. Then add the moong sprouts, coconut, chilli powder, salt, sugar, chili, lemon juice and mix well.

    Keep covered for 10 minutes. Then mix in spring onions, tomato, ginger and mint chutney. Gently turn well.

    Now heat ghee, pop cumin seeds, mustard seeds, hing, turmeric powder, curry leaves and when it sizzles, pour on the prepared mixture of vegetables and sprouts.

    Then adjust the seasonings. Sprinkle lemon juice. Garnish with chopped coriander leaves, refrigerate for an hour and serve cold as a healthy side dish with all the meals or eat as a healthy snack.
