First take a large bowl. Then add the moong sprouts, coconut, chilli powder, salt, sugar, chili, lemon juice and mix well.

Keep covered for 10 minutes. Then mix in spring onions, tomato, ginger and mint chutney. Gently turn well.

Now heat ghee, pop cumin seeds, mustard seeds, hing, turmeric powder, curry leaves and when it sizzles, pour on the prepared mixture of vegetables and sprouts.

Then adjust the seasonings. Sprinkle lemon juice. Garnish with chopped coriander leaves, refrigerate for an hour and serve cold as a healthy side dish with all the meals or eat as a healthy snack.
