Prepare the Ingredients:
• Chop the cabbage and spring onions. Slice the carrot and onions. Crush the garlic. - 2

Cook the Eggs:
• In a small bowl, whisk the eggs with salt and black pepper.
• Heat 1 tbsp oil in a pan, pour in the egg mixture, and cook on medium heat until set.
• Transfer the cooked eggs to a plate and set aside. - 5

Prepare the Stir-Fry:
• In the same pan, heat 1 1/2 tbsp oil. Add chopped spring onions and crushed garlic. Sauté for 1 minute.
• Add sliced onions and carrot. Sauté on medium heat for 1 minute.
• Add chopped cabbage and sauté on high heat for 3-4 minutes until slightly tender but still crunchy.
• Toss in the fresh red chilies, fried eggs, soy sauce, and sriracha sauce. Stir-fry on high heat for 1 minute.
• Sprinkle with sesame seeds and stir well. - 8
