Ingredients

4 servings
  • 2 cupswhole wheat flour (about 240 grams)
  • 2 bowlsfresh fenugreek leaves (methi), chopped
  • 2boiled potatoes
  • 2 teaspoonsginger-garlic-green chili paste
  • 1 teaspoonred chili powder
  • 1/2 teaspoonturmeric powder
  • 1/2 teaspooncoriander-cumin powder
  • 1/2 teaspoongaram masala
  • 1 teaspooncarom seeds (ajwain)
  • Salt to taste
  • 2 teaspoonsoil (for mixing into the dough)
  • Oil or ghee for cooking the parathas

Steps

    First, separate the fenugreek leaves from the stems, wash them thoroughly, and chop them finely. In a large mixing bowl, mash the boiled potatoes and add the chopped fenugreek leaves and ginger-garlic-green chili paste.

    Add the carom seeds by crushing them lightly with your hands, then add all the spices and mix well.

    Add the flour and 2 teaspoons of oil for mixing. Combine everything and knead into a dough. Add water only if needed.

    Divide the dough into small balls. Heat a skillet (tawa) on the stove. Roll each ball into a flat circle like a tortilla. Cook the paratha on the hot skillet, applying oil on both sides, until golden brown.

    Serve the hot Aloo Methi Parathas with tea, yogurt, chutney, or pickle. They taste delicious and are great for kids' lunchboxes too.

    Note: You can adjust the spices to your taste. If the dough feels too sticky while kneading, add a little dry flour to adjust the consistency.
