Ingredients

30 minutes
3 servings
  1. 1 cupquinoa(rinse)
  2. 1/4 cupsoyabean(rinse,soaked and boil for 2 whistles)
  3. 1/4 cupsplit moong dal (rinse)
  4. 1 tablespoonoil
  5. 1 teaspoonghee
  6. 1bay leaf
  7. 1 teaspoonjeera seeds (cumin)
  8. 1green chillies
  9. 1 teaspoonginger minced
  10. 1medium onion finely chopped
  11. 1medium tomato finely chopped
  12. 2 cupsmixed vegetables(carrot, green string beans,capsicum, green peas)
  13. 1/2 teaspoonturmeric powder
  14. 1/2 teaspoonRed Chilli powder
  15. 1/2 teaspooncoriander powder
  16. 1 teaspoongaram masala powder
  17. salt adjust to taste
  18. 3 cupswater
  19. 1 teaspoonlemon juice
  20. 4-5fried cashews
  21. 2 tablespoonscoriander leaves

    First of all prepare all the ingredients. Rinse and soak quinoa and split moong dal for 30 minutes. Rinse,soak(for 2 hours)and pressure cook the soyabean till 2 whistles.

    Heat oil and ghee in a pan. Add in the bay leaf and cumin (jeera) seeds. Let the cumin seeds splutter.Add the chopped green chilies, ginger, and onions. Saute till onions turn light brown.Then add mixed vegetables, tomatoes and cook for a minute.

    After rinsing the moong dal,soyabean and quinoa, add them to the pot along with turmeric,red chilli powder, coriander powder, garam masala, water, and salt.Mix everything well. Cover with lid and let it cook for 10 to 15 minutes on medium to low flame and Stirring between.

    Finally, open the lid, squeeze fresh lime juice over the khichdi, add chopped coriander leaves, fried cashews and mix everything well to combine.

    Healthy and nutritious quinoa soyabean mix vegetable Khichdi is ready. Serve hot with curd.
