First of all prepare all the ingredients. Rinse and soak quinoa and split moong dal for 30 minutes. Rinse,soak(for 2 hours)and pressure cook the soyabean till 2 whistles.

Heat oil and ghee in a pan. Add in the bay leaf and cumin (jeera) seeds. Let the cumin seeds splutter.Add the chopped green chilies, ginger, and onions. Saute till onions turn light brown.Then add mixed vegetables, tomatoes and cook for a minute.

After rinsing the moong dal,soyabean and quinoa, add them to the pot along with turmeric,red chilli powder, coriander powder, garam masala, water, and salt.Mix everything well. Cover with lid and let it cook for 10 to 15 minutes on medium to low flame and Stirring between.

Finally, open the lid, squeeze fresh lime juice over the khichdi, add chopped coriander leaves, fried cashews and mix everything well to combine.
